  Ham Slider Sandwiches on Hawaiian Sweet Rolls I first discovered these little bites of heaven years ago at a baby shower. I mean you can’t go wrong with a ham slider sandwich toasted in buttery oniony goodness! They are also great for a quick, easy dinner. These packages of Hawaiian Rolls are often on the “soon to be expired rack” at our grocery store, so whenever I see them, I stock up to make these sandwiches. FYI, the rolls and sandwiches both freeze really well. I also use whatever lunch meat (ham or turkey) and cheese (Swiss, Colby Jack, Cheddar, American) that we have lying around. Or a combination of them. They have all turned out great! I also usually leave out the poppy seeds just because I don’t keep them on hand. Mix and match the ingredients and make these your own.   Instant Pot Baked Potatoes Potatoes are my FAV! Seriously, my favorite food. I was raised on a potato farm and potatoes are in my blood. Love me a baked potato. Loaded with butter. And cheese. And bacon. And… You get the idea. But I don’t like the texture when they are cooked in the microwave and I’m not patient enough to wait for them to cook in the oven. So when I found out I could cook them in the Instant Pot, I was sold! And I made them that night. To my wonderment, they were soft and fluffy. No hard spots, no cooking for an hour, and they were cooked all the way through. Finally! Instant Pot Baked Potatoes Ingredients Potatoes (just don’t fill above the line) 1 C water Instructions Put water in Instant Pot. Add trivet. Cut potatoes into similar sizes and add to Instant Pot. Cook on Manual high pressure for 10 minutes. Allow pressure to naturally release for 10 minutes, then do a quick release. Instant Pot Baked Potatoes Love me a baked potato. Loaded with butter. Instant Pot Roast and Gravy

  Instant Pot Roast and Gravy Sunday is usually a “roast and potatoes” day in our house. Last week it was a beef sirloin roast made in the Instant Pot. My new favorite way to cook a roast. I swore by my crockpot for years, but I’m loving the way it turns out when it is pressure cooked. I discovered the Mississippi Pot Roast a few years ago and have incorporated it minus the peppercinis. Honestly, I’ve just never had them on hand to try them. Instant Pot Roast and Gravy Ingredients 5-6 lb roast 1 C water or beef broth 1 envelope Ranch dressing mix 1 envelope brown gravy mix ¼-½ C butter 1 T cornstarch 2 T water Instructions Add roast to Instant Pot. Whisk Ranch and brown gravy mixes into 1 C water. Pour over roast. Top with butter. Cook at Manual high pressure for 60 minutes (75 minutes if roast is frozen). Allow to naturally release. Instant Pot Macaroni and Cheese

  Instant Pot Macaroni and Cheese I finally was able to make this Instant Pot Macaroni and Cheese that I’ve been wanting to make for months. The rest of my family doesn’t really like mac & cheese. Unless it’s my youngest. And it has the word Kraft on the box.  We had a barbecue and I decided that would be a great addition, so I whipped it up. It ended up being so good even my husband and my youngest (the Kraft fanatic) enjoyed it. And they told me I could make it again. I call that a win!  It was so creamy, and it made a ton. I didn’t have heavy whipping cream so I used evaporated milk. And I used a combination of shredded cheddar, Colby Jack, and Havarti . Cheesy Chicken Noodle Soup Saw this recipe for Cheesy Chicken Noodle Soup the other day and knew I had to try it. I love how hearty it is. I thought it needed more flavor, so I added more seasonings than the recipe originally called for – 1 T more Ranch dressing mix, onion salt, and pepper. I also added more cheese (1 C) because… The more cheese the better! (Recipe accounts for adaptations.)
