Cheesy Chicken Noodle Soup
Saw this recipe for Cheesy Chicken Noodle Soup the other day and knew I had to try it. I love how hearty it is. I thought it needed more flavor, so I added more seasonings than the recipe originally called for – 1 T more Ranch dressing mix, onion salt, and pepper. I also added more cheese (1 C) because… The more cheese the better! (Recipe accounts for adaptations.)

Cheesy Chicken Noodle Soup
Ingredients
- 3 C cooked shredded chicken breast
- 1 can cream of chicken soup
- 6 C low-sodium chicken broth
- 1 C whole milk
- ½ C chopped celery
- 1 C chopped carrots
- 1 packet Ranch dressing mix (I added 1 T more)
- 1 t onion salt
- ½ t pepper
- 2 ½ C shredded cheese (I used Colby Jack and Cheddar combo)
- 4 oz cream cheese, softened
- 8 oz angel hair pasta, uncooked
Instructions
Combine chicken, cream of chicken soup, chicken broth, milk, cream cheese, carrots, celery, ranch dressing mix, onion salt, and pepper in a large pot over medium-high heat. Bring to a boil.

Turn down heat to medium-low and simmer for 20 – 25 minutes.

Add noodles and cheese. Simmer until noodles are fully cooked, about 6-8 minutes.
