Instant Pot Beef and Broccoli

  Instant Pot Beef and Broccoli A few months ago, I decided to make some Instant Pot freezer meals. This Instant Pot Beef and Broccoli was one that I froze back then and finally made last night. I adapted it for a freezer meal but you could make it fresh. I threw everything in except the cornstarch and froze. Instant Pot Beef and Broccoli Ingredients 1 small onion (I used granulated onion) 3 cloves garlic 1 1/2 lbs thinly sliced steak 3 T sesame oil 3 T olive oil 1/3 C soy sauce 3/4 C beef broth 1/3 C brown sugar 1 bag frozen broccoli (or fresh) 2 T water 1 T cornstarch Instructions for freezer meal Throw everything in gallon bag (except broccoli, water, and cornstarch). Put broccoli in another gallon bag. Seal both bags and put them into a third gallon sized bag. Freeze. When ready to cook, thaw and put contents of first bag into Instant Pot. Cook on high pressure for 10 minutes with a natural release. Mix 2 T water with 1 T cornstarch and saute for a couple of minutes to thicken....

  Peach Pie Filling After making the  Peach Jalapeno Jam , I started on some Peach Pie Filling. I’ve never canned peach pie filling so I found a recipe that looked delish. And it was a winner! I filled a couple of the bottles too full, so I used those to make a peach crisp that was divine! I’m more of a crisp person. Pies just take too long and I haven’t perfected pie crust yet. Peach Pie Filling Ingredients 6 qts sliced peaches (7-8 lbs) 7 C sugar 2 C plus 3 T ClearJel 5 1/4 C cold water 1 t cinnamon 1 3/4 C lemon juice Fruit Fresh Instructions Remove skin from peaches. Put them in boiling water for 30 seconds, then into ice cold water. Skins will slide right off. Slice peaches. Put them in a bowl with Fruit Fresh to keep them from browning. Combine water, sugar, ClearJel, and cinnamon in a large pot. Stir and cook over medium high heat until mixture thickens and begins to bubble.   Peach Jalapeno Jam I found a cute family orchard just a few blocks from our house. I’m not sure how I’ve missed it all these years, but I stopped and picked up some peaches and blackberries. If you are local, check out Pyne Fruit Orchard. Seriously such yummy fruit and great prices! I usually spend some time contemplating what to make when I get fresh fruits and veggies. This time I decided to can some  Peach Pie Filling  and Peach Jalapeno Jam. And YUM – totally the right choice. I make a lot of jalapeno jams and have tried quite a few recipes. I like the ones that include jalapenos, bell peppers, and liquid pectin. I’ve used both white and apple cider vinegar and don’t notice much of a difference. I also like a higher fruit concentration so I tend to add more fruit than the recipe calls for.
