Marshmallow Fudge

Marshmallow Fudge
This recipe came from my mother-in-law. She always has a tray of her fudge out anytime we visit her in November and December. She calls it Rocky Road Fudge, but since it doesn’t have nuts in it, I call it Marshmallow Fudge. Real original, I know.
This fudge is super smooth with a delicious flavor. I have substituted peppermint marshmallows too. So good.
Marshmallow Fudge
Ingredients
- 3 C mini marshmallows (in freezer)
- 2 ¼ large Hershey bars
- 1 (12 oz) pkg chocolate chips
- 1 C butter, cut in slices
- 2 t vanilla
- 4 C sugar
- 1 can evaporated milk
- 3 C mini marshmallows (not in freezer)
Instructions
Put 3 C marshmallows in freezer.
Place Hershey bars, chocolate chips, and sliced cubes of butter in a large bowl. Set aside.

In a large saucepan, combine sugar, evaporated milk, and marshmallows (not from freezer). Cook over medium heat, stirring constantly with a wooden spoon.


When the mixture comes to a soft boil, cook for 7 minutes, stirring constantly, and immediately pour over chocolate mixture. Stir until candy loses some of its shine (about 20 min).


Then mix in vanilla and frozen marshmallows.

Pour into jelly roll pan lined with parchment paper and chill.
