Christmas Rock Candy

I discovered Rock Candy a couple of years ago and it quickly became a family favorite. We try a couple new flavors each year. This year we added Pineapple and Pina Colada. We also made Root Beer (grandpa’s request) and Watermelon (daughter’s request).

I love how easy it is to make and it doesn’t require constant stirring!

Make sure to use good quality flavors. I use LorAnn brand. I get them at a local kitchen store, but you can order them online at www.lorannoils.com.

Christmas Rock Candy

Ingredients

  • 3 ¾ C sugar
  • 1 C light corn syrup
  • 1 C water
  • 1 t flavoring
  • Food coloring
  • ¼ C powdered sugar

Instructions

Line a baking sheet with parchment paper.

Combine sugar, syrup, water and color in saucepan, dissolving the sugar as much as possible.

Bring to boil and reduce to medium, let simmer until the candy thermometer reads 302* (hard crack). It takes 20-30 minutes.

Remove from heat, then add flavor. Mixture will bubble and shoot up some steam, which is normal.

Pour mixture onto prepared pan and cool completely.

Break candy into pieces. Put powdered sugar into a gallon size bag, then add candy and shake to coat.
