Instant Pot Shredded Chicken

I love having frozen shredded chicken on hand. And once I found out how easy it is to cook in the Instant Pot, I’ll never go back to boiling it on the stove.

I like to make seasoned shredded chicken also. If I make seasoned chicken, I do not use the trivet. That way the seasoning can infuse the chicken.

For Mexican chicken, I replace the water with a jar of salsa.

For Italian chicken, I replace the water with a bottle of Italian dressing or add a packet of dry Italian seasoning to the water.

You can add whatever seasonings you’d like. If using liquid based seasonings, use it instead of the water (make sure you have at least 1 C of liquid). If using powdered seasoning, just add it to the 1 C water.

Instant Pot Shredded Chicken

Ingredients

  • 4 lbs chicken breasts
  • 1 C water

Instructions

Please trivet in the bottom of Instant Pot. If making seasoned chicken, do not use the trivet.

Add water and chicken to the Instant Pot.

Cook on Manual or Poultry high pressure setting for 18 minutes. You might have to adjust the time for the thickness of the chicken breasts, but I found that 17-20 minutes works best.

Once it’s finished cooking, allow it to naturally release.

Remove from Instant Pot and shred. I put it in my KitchenAid mixer and shred it that way.

Then divide into freezer bags and lay flat to freeze.

If making seasoned chicken, I put 1 cup of leftover liquid in the freezer bag with the shredded chicken.
