Cinnamon Rolls (made with Mashed Potatoes)
Cinnamon Rolls made with mashed potatoes? What? How? Yes, I was just as confused when my sister-in-law told me that was her secret ingredient. But WOW, they are so good and so fluffy. Be prepared to be amazed!
We make these when we have leftover mashed potatoes from Sunday dinner. Why do I only make mashed potatoes on Sunday?? Guess it’s a family thing.
The original recipe passed down from her family included raisins. But why, oh why, would you do that?

Cinnamon Rolls
Ingredients
- 2 C scalded milk
- ½ C butter
- 2 C mashed potatoes
- 2 pkg yeast
- ½ C warm water
- 2 eggs
- 1 C sugar
- 2 t salt
- 7 C flour
- ½ C butter
- 1 C brown sugar
- 2 T cinnamon
- Favorite frosting (mine is linked here)
Instructions
Dissolve yeast in warm water and let foam.
Beat eggs, then add butter, sugar, salt, mashed potatoes, and milk. Add yeast and water mix.
Stir in flour. Knead until well mixed.
Raise until doubled, approximately 1 hour.
Punch down and roll out on floured surface so it’s about ½” thick.
Melt ½ C butter and pour over dough.
Mix cinnamon and brown sugar together. Sprinkle over entire surface so that’s well covered.
Roll and cut. (I like to use dental floss to cut mine. Then they aren’t all squished.)
Let rise on a cookie sheet for 1/2 hour. (Link to my favorite cookie sheets.)
Bake at 350° for 15 – 20 minutes.
Frost and try not to eat the whole pan.
